We all love the sound of muffins, but ZUCCHINI in muffins might make one hesitate to try!

Although the idea of putting shredded zucchini into a baked good may sound unappealing, not only can you not taste the vegetable at all, but it also provides added greens into your day! The vitamins and minerals that are received from vegetables are extremely important for all human consumption, especially to those who are constantly depleting themselves during tough practices and games. Zucchini specifically can provide carbs, fiber and is high in potassium, aiding in healthy digestion, good energy levels and hydration.
