Christmas Day is (almost) here! What better way to celebrate with friends and family than contributing your favorite holiday cookies to the party or meal?!
This time of year is full of all the delicious baked goods, and while there is absolutely no shame in making sure you get every dessert on the dessert table, it is also acceptable to create healthier versions of your own!
In order to be in the holiday spirit AND bake a delicious dessert, which can also be used as a grab and go midweek fuel snack, we have decided to make a simple, protein packed cookie full of ingredients that you may in fact already have on hand! It's hard to say "no" to a peanut butter blossom cookie, so we decided to make one that is no guilt but all taste! Checkout the simple ingredients and "how to" below!
1 flax egg (1 tbsp flax seed meal + 3 tbsp warm water, put in fridge for 5 mins, then add in as you would a normal egg!) or 1 regular egg
3 tbsp solidified coconut oil
3/4 cup creamy peanut butter
1 and 1/4 cups oat flour (gf or not)
1 tsp baking powder
1/2 tsp maple syrup or 3/4 cup coconut sugar
1 scoop FEM Power Protein Powder
Enough pieces of dark chocolate, milk chocolate, or Hershey kisses for the top of each cookie
Blend old fashioned oats in a blender or food processor (unless already have oats in a floured texture). Combine flax egg, coconut oil and peanut butter until fully mixed together. Once mixed, add in remaining ingredients, except the chocolate. Mix all ingredients together and place in refrigerator for 35 minutes! Once 35 minutes is up, use a tablespoon and scoop out 2 tablespoons worth of dough and roll into 1 ball. Repeat this process until all dough is used from bowl. While doing this, preheat oven to 350 degrees F. Once balls are placed along parchment paper, lightly press down (not too hard because you want cookies to be thick!). Place cookies in oven for 10-12 mins. After bringing them out of the oven, let them cool for about 1 minute, and begin placing chocolate on the top, lightly pressing down on the chocolate. Once cool, eat or place in refrigerator to harden cookies a bit more! Enjoy throughout the week or at a holiday event! Happy Holidays!
